"We are free to say that Noah Davis & Co.'s Combination of MOCHA and JAVA COFFEES surpasses in richness and delicacy of flavor any we have ever before used; and that, in addition to its superior quality, we find it to be from Thirty to Forty per ceni. cheaper, from the fact that it requires but two-thirds as much in weight to produce a given quantity.

We feel assured that, with our conviction of its pre-eminence in quality, the encomiums of our patrons, and the testimony of our employees, we are fully warranted in recommending it to proprietors of Public Houses and all others, not doubting their unqualified approbation after a fair trial." The principle of slow conduction of heat through soapstone, with the prevention of the free escape of vapors, permits the development of the aromatic oil in the coffeekernel, undergoing the change slowly in the most perfect manner, while the oil remains engaged in the tissues of the kernel. Coffee roasted in this apparatus retains a larger amount of flavor and taste than is usually found in it, and the roasted coffee becomes therefore more economical for consumption. Respectfully, A. A.
